Cheddar Cauliflower Bacon Mash
4 tbsp Kerrygold Butter
16 oz cauliflower
2 oz cream cheese
2 oz cheddar cheese, grated
2 tbsp heavy cream
10 tbsp crumbled bacon
2 oz scallions

- Sauté cauliflower in cauliflower in 2 tbsp of butter and seasonings.
- Once cooked, transfer to food processor and add cream cheese, heavy cream, 2 tbsp kerrygold and process until combined.
- Grate 1 1/2 oz cheddar cheese directly in the food processor.
- Layer bacon crumbles in casserole dish, then a layer of cauliflower mash, another layer of bacon, and another layer of cauliflower mash.
- Top with the remaining 1/2 oz of cheddar, bacon crumbles, and scallions.
- Bake at 415 degrees for 15-20 minutes or until Cheese is melted.
