Keto Pork Rind Chicken Parmesan Bake
2 eggs
2 cups Parmesan
2 cups of crushed pork rinds
Flavor God Garlic Herb Seasoning
Flavor God Italian Zest Seasoning
4 tbsp coconut oil
1 1/2 lbs chicken breast (1 lb cooked)
16 oz zucchini
2 oz raw spinach
2 cups Raos pizza sauce
2 tbsp kerrygold butter
1 1/2 cups mozzarella, shredded
1. Slice chicken in strips.
2. Whisk 2 eggs in a bowl
3. In separate bowl combine crushed pork rinds, Parmesan cheese, salt, and seasonings.
4. Heat coconut oil in large Skillet
5. Dip chicken in eggs and then dip in Parmesan cheese and pork rind mixture.
6. Fry chicken in coconut oil and flip once brown.
7. Transfer to plate as each one is done to cool.
8. Melt butter and pour in the bottom of a casserole pan
9. Add diced zucchini, spinach, 1 cup of sauce, and 1/2 cup of mozzarella to casserole dish and toss around to mix together.
10. Layer cooked chicken on top, cover with 1 cup sauce, and 1 cup cheese.
Bake on 400 for 30 minutes or until cheese starts to brown and looks done. *The zucchini adds extra moisture to the dish. ———
