Whipped Cheesy Cauliflower Mash
2 bags of chopped cauliflower (2 heads)
6 tbsp butter
8 oz mascarpone cheese
1/4 cup heavy cream
2 cups shredded cheese
Seasoning:
2 tbsp sea salt
1 tbsp black pepper
1 tsp turmeric (gives it a strong yellow color)
1 tsp garlic powder
1 tsp onion powder
Sauté chopped cauliflower in butter in seasoning until it is soft
Transfer to a bowl or mixer to purée cauliflower, heavy cream, and mascarpone cheese.
Stir in shredded cheese reserving some for the top.
Transfer to baking dish and top with remaining cheese
Bake at 375 for 30 minutes
Notes:
You can use any type of seasoning that you’d like based on the flavor profile you want this dish to have. You can also use any type of shredded cheese you’d like. If you don’t have mascarpone, you can substitute cream cheese.
If you want a thicker mash, use less heavy cream. If you want a thinner mash, add more.
