RECIPE | Lamb & pork ZucChini lasagna

I made a huge pan of this as meal prep for our family and it’s extremely filling.

Ingredients

3 large zucchini

2 cups Spinach

2 lbs pork sausage

1 lb ground lamb

40 oz Rao’s Sauce

8 oz Full Fat Ricotta Cheese

1 cup Parmesan

3 cups mozzarella cheese

2 eggs

Flavor God Italian Seasoning

Instructions

Slice zucchini like lasagna noodles and let them rest on paper towels. Sprinkle with salt to help draw out moisture for 15 minutes and then blot with paper towels.

Brown sausage and lamb in skillet and drain. Set aside

Combine ricotta, Parmesan cheese, eggs and seasoning in bowl and stir.

Pour a thin layer of sauce on the bottom of the pan.

Layer with zucchini, meat, spinach, ricotta, sauce and shredded mozzarella.

Bake at 350 for 30 minutes loosely covered.

Remove cover and bake for 15 minutes.

Allow to rest and cool to firm up before serving.
