RECIPE: TUSCAN CHICKEN & SPINACH

Tuscan Chicken & Spinach

3 tbsp olive oil

3 tbsp butter

1 cup grape tomatoes

2 tbsp lemon juice

4 tbsp Italian seasoning

1 tbsp oregano

2 tbsp garlic powder

Salt

Pepper

4 oz diced pancetta

1 cup heavy cream

4 tbsp cream cheese

1/2 cup Parmesan cheese

11 oz baby spinach

Heat olive in a large pan and add tomatoes. Season with salt and pepper.

Allow to cook for 5-7 as you sauté them around. Use a fork or back of a spatula to gently press on the tomatoes to release the liquid in the pan.

Add diced pancetta and sauté

Add lemon juice, heavy cream, Parmesan cheese and cream cheese. Stir to melt and combine to create sauce.

Add seasonings and then add the spinach to the pan and stir slowly until cooked.

Add the cooked chicken and stir to combine

We use our butter meats cooked in a crockpot for quick, easy weeknight meals. If you don’t have pancetta you can used cooked bacon or just don’t add it.

You can use any protein, including shrimp or salmon! You can even serve this over zucchini noodles or cauliflower rice.

If you eat pasta, this dish would go great over some noodles!
