RECIPE | Broccoli CHEDDAR SOUP
House Of Keto | Broccoli Cheddar Soup
Ingredients
1 small onion diced
3 cloves of garlic diced
2 heads of broccoli
3/4 cups heavy cream
16 oz cheddar cheese
8 oz sharp cheddar cheese
6 cups Chicken stock
1 tbsp Salt
1 tbsp Black Pepper
1 tsp chili powder
1/2 tsp cayenne pepper
1 tsp cumin
1 tsp coriander
1/2 tsp paprika
Instructions
Sauté diced onion and garlic
Add chopped broccoli to the pan and sauté
Transfer broccoli, garlic, and onions to crock pot
Add chicken stock and seasonings
Cook on low for 4 hours
Remove 1/3 of the broccoli from the broth and set aside
Transfer soup to blender, food processor, or use a immersion blender to purée chicken stock, broccoli, onion and garlic.
Add heavy cream and cheese
Continue to blend to combine.
Transfer back to pot and add the broccoli that was set aside back to pot.
Heat on warm until soup is back to desired temperature
Top with bacon 💗
Notes:
You can add some more protein to this by using shredded chicken, beef, pork, or any meat you’d like!
