RECIPE | CHILI & CAULIFLOWER RICE CASSEROLE
Chili & Cauliflower Rice Casserole
INGREDIENTS
2 lbs ground beef
2 cups fire roasted diced tomatoes
1 cup crushed tomatoes
1 diced onion
2 tbsp salt
1 tbsp pepper
4 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
2 tsp cayenne pepper
4 cups cauliflower rice
3 cups cheddar cheese
INSTRUCTIONS
In large pot cook ground beef on medium heat with 2 tbsp of chili powder and 1 tbsp salt
Once cooked and drained, add chopped onion and cook for 3 minutes
Add diced tomatoes and crushed tomatoes to pot with meat and stir.
Season with remaining seasoning and allow to cook for about 8 minutes
Add riced cauliflower to pot and stir to combine
Add in 2 cups of shredded cheese and stir to combine.
Transfer to a baking dish and top with remaining cheddar cheese. I like using sliced cheese instead - you’d need about 6 to cover the top of the pan.
Bake at 400 for 25 minutes
Serve with sour cream and diced jalapeños on top if you’d like!
